Vegetarian Style Stuffed Mushrooms
Vegetarian Style Stuffed Mushrooms is a recipe that can be prepared so quickly...it will make your head spin. This recipe uses every part of the mushroom so that nothing goes to waste. Sometimes I like to make them and add a little crab meat but it's not a necessity.
If you're having a party and you need a fast appetizer, this recipe is definitely one you need to have in your recipe box. It's pretty economical, too. The most expensive ingredient is the mushrooms and you can find them on sale sometimes. There are also grocery stores and specialty markets that sell them in bulk and many times you get a better deal that way. The mushrooms used in this recipe are white button mushrooms. Whip out your chef's knife and let's get started!
Ingredients
- 8 ounces white button mushrooms
- 1 garlic clove, finely minced
- 2 Tablespoons fine bread crumbs
- 1 1/2 Tablespoons finely shredded parmesan cheese
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 Tablespoon mayonnaise
- 1 Tablespoon unsalted butter
- Salt & pepper, to your taste
- Cooking oil spray, as needed
- 1 Tablespoon minced parsley, optional
- Assemble all ingredients and kitchen tools. Recommended equipment: 10-12" saute pan, chef's knife, cutting board, colander, vegetable peeler, measuring spoons, tongs, spatula, 8x8 baking dish, plate, paper towels, small mixing bowl, serving platter.
- Rinse dirt from mushrooms. Snap the stem out of the mushroom. Use the peeler to scoop some of the flesh out of the mushroom, taking care not to poke a hole through the bottom.
- Heat saute pan (medium heat), coat with cooking spray. Place mushroom caps in saute pan, cook 1-2 minutes per side.
- Place caps on plate lined with paper towels, scooped side down. Set oven to 350 degrees and prepare filling.
- Chop mushroom stems (small dice). Melt butter in saute pan (medium heat). Add garlic, saute about 1 minute. Add mushroom stems, saute about 5-6 minutes.
- Transfer mushroom/garlic mixture to mixing bowl. Add bread crumbs, herbs, Parmesan cheese and mayonnaise. Add salt and pepper to your taste. Mix well.
- Coat baking dish with cooking spray. Stuff mushroom caps with stuffing mixture and place in baking dish. (You may sprinkle extra Parmesan cheese on top if desired).
- Place baking dish in oven for 5-8 minutes. While the mushrooms are baking, mince parsley.
- Remove mushrooms from oven. Place on serving platter and garnish with parsley, if desired.
